For a very long time, I keep saying that from tomorrow I will make bread at home, but I still postponed, probably out of convenience, thinking that it will not come out according to my expectations.

Today, being Sunday and all the shops in the area being closed, I thought it was time to make a loaf of bread. By surprise, I didn't have much white flour in the pantry, instead I found a bag of wholemeal flour. Hence the idea of ​​doing it with seeds, better than not. I got to work and you will see what came out during the recipe.

How to make wholemeal bread with seeds, a simple and quick recipe?

  • 300 g wholemeal flour
  • 400 g white flour type 650 + sprinkled work surface
  • 120 g seed mix
  • 20 g of fresh yeast
  • 400-450 ml of lukewarm water
  • 1 tablespoon salt
  • 1 teaspoon caster sugar
  • 3-4 tablespoons of oil

For starters we will put half of the lukewarm water in a bowl with the yeast and half the amount of wholemeal flour, salt, oil and sugar. Mix and leave the bowl covered with a kitchen towel or a food foil to activate the yeast.

Mix the rest of the wholemeal flour with the white flour and 100 grams of the seed mix.

Put the mixture of dry ingredients over the yeast composition, add the water difference and knead until you get an elastic and homogeneous dough.

Put the dough in a bowl greased with oil and covered with a kitchen towel or a food foil to leaven until it doubles in volume.

After leavening, remove the dough on a work surface sprinkled with a little flour and spread in a rectangular shape. Fold in 3 and run as seen in the photos.

Spread the rest of the seeds on the table, grease the bread with water and pass it through the seeds until they stick well to the dough.

Preheat the oven to 220 degrees.

Leave to rise again for 30-35 minutes, depending on how hot it is in the kitchen.

Bake for 20 minutes at 220 degrees, then reduce the temperature to 180 degrees and bake for another 20 minutes. We take it out on a grill and let it cool, after which we can slice it.

First, you need to put some ingredients on the table:

- 240 gr of wholemeal flour

- 5 tablespoons of mixed seeds according to preferences

- a teaspoon and a half of salt.

The way to prepare bread with seeds is the following:

First, put hot water in a bowl, add the sugar and then the dry yeast. Stir continuously until you get a smooth mix, then set everything aside for 10 minutes. After that, add the olive oil, the seed mixture and, slowly, pour in the rain and the two types of flour in the bowl mixture. Knead the crust until you notice that it no longer sticks to the walls of the vessel. The process should take 15-20 minutes, the goal being to obtain a homogeneous and slightly elastic dough.

Then grease another bowl with oil, this time at least twice the diameter of the piece of coke. Put the latter in the bowl, shaping it into a sphere. After that, cover it with a towel and let it rise for at least an hour in a warmer place in the kitchen. All this time, turn on the oven, preheating it to 220 degrees Celsius.

When the time has elapsed, knead the dough again for two to three minutes, then give it the desired shape and place it in a tray previously greased with a little oil. Prepare the egg white bread icing and water and grease the dough shaped with it. After that, sprinkle your favorite seeds on top.

Homemade bread with seeds should be baked at 220 degrees Celsius for 20 minutes, after which the temperature should be lowered to 200 degrees Celsius for another 10 minutes or until ready. You can check this using a toothpick.

At the end, take the preparation out of the oven, let it cool and slice it or, as the case may be, store it in a paper bag.
