Cinco de Mayo is an ideal theme for this week’s SWAT (Sharing With A Theme).

Cinco de Mayo, also known as the fifth of May, is a holiday that commemorates the day the Mexican army defeated France at the Battle of Puebla during the Franco-Mexican War (1861-1867) in 1862. It is not as big a holiday in Mexico as it is in the U.S. Here, Americans and Mexican-Americans alike take the opportunity to celebrate with fruity margaritas, spicy guacamole, and other Mexican treats.

With so many different recipe ideas for Cinco de Mayo, we decided it would be the ideal theme for this week’s SWAT (Sharing With A Theme). We put the Culinary Content Network and our staff to the test to come up with Cinco de Mayo recipes and here are some of the highlights:

  • Christina Lakey of Food Apparel shared with us her recipe for decadent tres leches cake, which is a perfect way to end a spicy meal.
  • Lauren Gordon, the entertain editor at The Daily Meal, made a fruity margarita with raspberries that is sure to get the party started.
  • The winner this week is Peter Block of Feed Your Soul 2 and his recipe for Mexican stuffed meatballs. These cheese-filled meatballs are a delicious and festive appetizer for your celebration.

All of the recipes featured can be made at home for about $20 or less, excluding the cost of small amounts of basic ingredients such as butter, oil, flour, sugar, salt, pepper, and other dried herbs and spices.

Cinco De Mayo celebrates Mexican-American heritage and falls on Taco Tuesday this year. We’re bummed we can’t celebrate in Southwest Detroit but look forward to supporting the local restaurants and businesses in Mexicantown when the crisis is over. Do you celebrate Cinco de Mayo? We love to do our own little feast at home to celebrate. I think it’s fun just to get in the spirit of the holiday and fun for the whole family. Before we had kids, my husband and I would go out and eat on Cinco de Mayo, but now with kids, it is just easier if we eat at home. I’m sure the restaurant patrons would thank us for that too, but we really do love having our own food at home anyway.

Of course chips and queso are always a must but we like to mix it up with appetizers, main dishes, and desserts too. We decided to try out this Mexican Rice Casserole this past week and loved it. I figured it should be on our menu too now. I did a great mix of veggies, rice, and beef, then you can eat it as is, with chips, in a lettuce wrap, or with tortillas.

My husband loves to eat this with tortillas and I prefer chips. I will say though if you are making it more healthy then with lettuce is a great way to do it. Then, dip it in salsa and you are all set!

Lemon Curd Margarita

If you like lemon, you will love this cocktail. It&rsquos so yummy and super easy to make. All you need is some lemon curd, but don&rsquot fret, you can find the recipe here.

Add the curd, tequila, Cointreau, and simple syrup to your blender and you have a delicious cocktail!

Salsa Verde


1½ lbs tomatillos, husked and rinsed
2 serrano peppers, stemmed
2 cloves garlic
2 chunks onion, approximately
¼ cup 1 bunch cilantro, approximately
1 cup cilantro leaves
½ tsp salt
1 tbsp grapeseed or safflower oil

Guacamole Cheese Dip


8 oz Neufchâtel cheese
1½ avocados
2 green onions, trimmed and roughly chopped
2 oz shredded cheddar cheese
3 tbsp cilantro
⅛ tsp garlic powder
1 tbsp fresh lime juice
½ tsp chili powder
½ tsp kosher or sea salt
⅛ tsp paprika
⅛ tsp cayenne pepper
¼ tsp ground cumin

Tomatillo Ranch Dressing


1 cup plain non-fat Greek yogurt
½ cup low-fat milk
1 medium tomatillo, husked and halved
1 jalapeño pepper, seeded
⅓ cup fresh cilantro leaves
2 cloves garlic
½ avocado
¼ tsp ground black pepper
2 tsp dried parsley
½ tsp sea salt
½ tsp dried dill
⅛ tsp paprika
1 tbsp white wine vinegar
½ tsp Worcestershire sauce

Easy Salsa


4 oz canned green chilies, not drained
1 tbsp fresh lime juice
1 clove garlic, quartered
½ tsp kosher salt
¼ tsp ground cumin
14½ oz can diced tomatoes, not drained
2 tbsp onion
¼ cup fresh cilantro leaves

Roasted Red Enchilada Sauce


2 dried guajillo chilies
8 oz can tomato sauce
2 cups vegetable broth
1 clove garlic
1½ tbsp chili powder
1 tbsp canola oil
1½ tsp paprika
¼ tsp kosher salt
¼ tsp dried oregano
¼ tsp ground cumin

Piña Colada


3 fl oz light rum
⅓ cup coconut milk
3 tbsp agave nectar
1½ cups pineapple chunks
2 cups ice cubes

Agua Fresca de Sandia


4 cups watermelon, seeded and cubed
2 tbsp agave nectar
1 tbsp fresh lime juice
1 cup ice cubes



½ cup almonds, soaked in 2 cups hot water for 3 hours and then drained
¼ cup cooked rice, rinsed after cooking
1 tsp ground cinnamon
2 tbsp agave nectar
1 cup cold water
1 cup ice cubes

Mango Margarita Ice Pops


½ cup mango yogurt
¼ cup ripe mango
1½ oz orange juice
3 tbsp lime juice
½ tbsp agave nectar
1½ oz tequila
½ oz triple sec berries or other fruit, optional

Piña Colada Sherbet


⅔ cup full-fat coconut milk
½ small banana
1 tbsp fresh lime juice
4 tsp agave nectar
10½ oz frozen pineapple chunks, approximately
2½ c ⅔ cup ice cubes, approximately 5-6 ice cubes

Cinco de Mayo--um, the Fifth of May--has grown into a seriously popular spring holiday in the United States.

Sure, much of the holiday&aposs buzz comes directly from aggressive beer advertising campaigns, and yeah, not many revelers even know what it is they are celebrating (FYI: May 5 marks the anniversary of the Battle of Puebla, when Mexican troops defeated the French in 1862). But we still love the holiday, as it&aposs an excellent excuse to drink good beer and eat fabulous food (be it authentically Mexican, Tex-Mex, or Mexican-influenced). Here are our top 10 Cinco de Mayo recipes--with 2 bonus recipes thrown in for good measure.

Basically, if you have fantastic guacamole, chips, and beer (with lime, of course, if you can find any), you have a party. This four-fork recipe--with just avocado, lime juice, salt, and cilantro--is ridiculously easy. This is your guy.
