This panna cotta with strawberry jelly is a fresh and truly delicious spoon dessert. I know that it is not easy to find strawberries in this period, but to get this contrast of colors so bright, alternatively the berries will be fine. You can prepare the panna cotta in advance and keep the glasses in the fridge for a few days so that they can be served at the first opportunity, just take care to cover the glasses with a little silver paper;) There are 2 days left until the birthday of Elisa, and I are all busy with the preparations for her party and above all with the choice of the cake, bases, filling, decoration, a slaughterhouse :) so I run away and go to design: *
How to make panna cotta with strawberry jelly
Leave the gelatin in a small bowl with cold water, so that it softens.
Pour the cream, milk, sugar and vanilla into a saucepan. Start heating over low heat.
Bring to a boil and cook for about 15 minutes, stirring occasionally.
Then remove from the heat and add the isinglass, after having squeezed it gently.
Mix well until the gelatin is completely dissolved.
Let the mixture cool and in the meantime prepare the strawberry jelly.
Combine strawberries, sugar, starch and lemon juice in a bowl.
Blend everything with the blender.
Then transfer the mixture to a saucepan and start cooking over low heat, until it thickens.
Put some strawberry sauce on the bottom of the glass cups.
Fill the glasses with panna cotta up to 1-2 cm from the edge.
Then add another layer of strawberry sauce. Keep in the fridge until ready to serve.
