Lemon Cheesecake is one of the last desserts I made before giving birth, one of the best Cheesecake I have made, fresh, creamy and lustful at the same time that has conquered the whole family. The contrast between the sweet flavor of the cream cheese is combined with that of the lemon jelly with a pungent citrus flavor, giving this Lemon Cheesecake a very special flavor. This is the first recipe that my mother placed and I obviously dedicate it to my puppy who I call "lemon tenderness". My husband, elisa and I thank you again so much for the affection you are showing us and we wish everyone a good start to the week, I run away to be a mother;)


How to make lemon cheesecake

Blend the biscuits in the mixer and mix them with the melted butter until the mixture is smooth.
Pour the biscuit mixture into the bottom of a springform pan and place in the fridge.

Soften the gelatin sheets in cold water then squeeze them and melt them on the stove with a spoonful of milk

In a large bowl, cream the philadelphia and the icing sugar, then add the lemon yogurt, grated zest and lemon juice.

Cream the mixture then add the melted gelatin and mix. Finally add the whipped cream to the cheesecake cream.

Mix the cream with a wooden spoon until you get a smooth and homogeneous cream

Take the springform pan out of the fridge and pour the mixture obtained over the biscuit base. Level as much as possible and place the lemon cheesecake in the fridge for 2 hours.

Once the lemon cheesecake has cooled, prepare the lemon jelly for the garnish.
Put the sugar, the corn starch and the finely grated lemon peel in a saucepan and mix.

Add the water and lemon juice and mix, then turn on the flame and bring to a boil

Stir constantly and cook for about 5 more minutes or until the gelatin has thickened, then add a pinch of yellow food coloring

Allow the gelatin to cool then take the lemon cheesecake from the fridge and spread it over the entire surface of the cake.

Put the cheesecake back in the fridge for an hour then remove it from the springform pan, place it on a serving plate and garnish with fresh lemon wedges

Slice the lemon cheesecake and serve
