The pizza with mother yeast gave me a little trouble, after having prepared the bread with my sourdough for the first time and having had an excellent result, I immediately tried to make the pizza dough by replacing it in my recipe brewer's yeast with mother yeast ... a tragedy. The leavening had gone well but during cooking the pizza was piled up as if it were raw, the first time I thought it was the fault of my mother's oven or in any case that the temperature had not created the cells, so I tried again by cooking the pizza of the my oven, same story, perfect leavening but dough piled up except on the cornices where it was pretty swollen. So I started studying the various recipes to prepare pizza with sourdough to try to understand something, well my mistake consisted in handling the dough once it had risen, my taking the dough from the bowl and rolling it out with my hands in the pan they had made all the leavening bubbles break, so yesterday I decided to try again with due care. After a night of leavening, I dropped the dough on the pastry board, I made the famous folds that I had not made in the previous times, I divided the dough in two and I simply rolled the dough with my hands (as pizza chefs do for be clear) and finally I made a pizza lady, as they say, whoever wins it and I won the third time: D Well if you want to try your hand, this is my recipe, a kiss.
How to make pizza with sourdough
The night before Dissolve the freshened sourdough in just warm water
Now add the two types of flour and start kneading
When you have obtained a well-tied dough, add oil and salt
Knead until you get a ball then cover the bowl with cling film and put in the oven off until the next morning
The dough will be doubled in volume
Now very gently, drop the dough onto a floured pastry board and without kneading or manipulating it, make folds of the dough
Divide into two parts and spread each one by pulling lightly with your hands into the trays sprinkled with a drizzle of oil. Cover with cling film and let it rise again for a couple of hours
Now season the pizza with the tomato sauce and bake in a preheated oven at 250 °
Cook for 15 minutes, then add the mozzarella and continue cooking for another 5 minutes
Then serve your pizza with the sourdough
