Strawberry macarons are delicious and refined sweets, their fuchsia color and the strawberry filling make them one of my favorite flavors and for the month of May I tried to prepare them to give you an idea of a dessert to prepare for the party of the mother. Every time I prepare the macarons I get performance anxiety, I am always afraid that a hitch may occur and I am always very careful to put the egg whites at room temperature, to sift the flour well, to make small and not too close piles and above all to have the patience to wait for them to dry well before putting them in the oven. The only thing I can never do is wait until the next day to taste them, in the evening my strawberry macarons were already beautiful that gone :) I leave you to the recipe and I wish you a sweet day: **
How to make strawberry macarons
In a bowl, mix the almond flour with the icing sugar
Mix and pass everything through a sieve to obtain a fine powder
Beat the egg whites at room temperature with a pinch of salt
Add the sugar a little at a time and then the coloring and whip until a homogeneous color is obtained
Now add the almond mixture to the meringue and mix with a wooden spoon from the bottom up, being careful not to dismantle the mixture.
You will get a thick and homogeneous mixture
Put the macarons mixture in a pastry bag with a thin nozzle with a smooth tip
Form the macarons on the parchment paper well separated from each other
Let the sweets rest for an hour or until gently placing your finger on their surface it will no longer be sticky
Meanwhile, prepare the strawberry cream
Put the strawberries cut into small pieces and the cream in a saucepan
Cook for 5 minutes then blend everything and add the starch and sifted sugar and mix until you get a thick cream. then let it cool completely
Bake the strawberry macarons for 12/15 min at 150 ° in a preheated oven
As soon as they are ready, place the pan on a cold surface and let it cool completely before removing them.
Now garnish the macarons by placing the cream in a pastry bag and garnishing half the half shells, then overlap the other macarons and exert a slight pressure to make them stick well.
Wait a few hours before tasting them, the ideal would be the next day and here are my strawberry macarons :)
