Here's a colourful and easy pasta and bean dish that makes a satisfying main course all on its own. Garlic, olive oil, onion, Tabasco sauce and pecorino cheese add lots of sunny flavour.

  • For the sauce
  • 2 tbsp olive oil
  • 1 onion, chopped
  • 1 garlic clove, crushed
  • 1 celery stick, finely chopped
  • 1 can (about 400g) no-salt-added chopped tomatoes
  • For the pasta and beans
  • 350g (12oz) spaghetti
  • 2 cans (about 400g each) chickpeas, drained and rinsed
  • ½ tsp Tabasco sauce, or to taste
  • 175g (6oz) baby spinach leaves
  • pepper to taste
  • 55g (2oz) pecorino cheese, freshly grated
  • fresh parsley leaves to garnish

  1. To make the sauce, heat the olive oil in a heavy saucepan, add the onion and garlic, and cook over a moderate heat, stirring occasionally, for 3–4 minutes or until softened.
  2. Add the celery and sauté, stirring, for 1–2 minutes, then stir in the chopped tomatoes with their juice and bring to the boil. Reduce the heat and leave to simmer gently, stirring occasionally, for about 15 minutes or until thick.
  3. Meanwhile, cook the spaghetti in a large pan of boiling water according to the packet instructions.
  4. When the sauce is cooked, stir in the chickpeas and Tabasco sauce. Add the spinach leaves and simmer, stirring, for 1–2 minutes or until the spinach wilts. Season with pepper to taste.
  5. Drain the spaghetti and toss with the chickpeas and tomato sauce. Serve immediately, sprinkled with the pecorino cheese and parsley.

Spaghetti with Spicy Moroccan Chickpeas

(serves 2)

Put a large pot of water on to boil, while you are waiting for it to boil, start the sauce.

Heat a large saucepan to medium high heat and add the tablespoon of oil. Add the sliced onions and a big pinch of salt. Slowly cook the onions, stirring regularly until evenly browned. Add the garlic, cumin and cayenne and cook for another 3 minutes until fragrant. If there are a lot of browned bits on the bottom of the skillet, you can stir in a tablespoon of water and scrape that flavour back into the onions. Add the honey, and stir to incorporate. Stir in the roasted red pepper (*), tomato sauce and chickpeas, reduce temperature until it is calmly simmering.

When the water has boiled, add a palmful of salt to the water. Cook the spaghetti according to package directions.

A minute or two before your pasta timer goes off, stir the spinach and mint into the pasta sauce, turn up the heat so that the spinach can cook. Once the spinach has cooked stir in the lemon juice and taste for seasoning. Correct if necessary and return heat to low. Toss the sauce with pasta and serve hot.

(*) You can use jarred or a fresh roasted red pepper. I always use fresh since it doesn't take very long. I quickly char it under the broiler or over a gas flame if I have one. Once blackened on all sides I put it in a bowl covered with plastic wrap. Let it steam for five minutes and then remove the skin and core. Done!

A Moroccan take on a classic Italian pairing or vice versa? I wonder who invented it first? Well, when I look around the world at various cuisines, I notice many variations on meatballs in tomato sauce, or some kind of sauce and honestly, who cares who did it first? It’s just delicious. When I make this dish I always serve it with my Spiced Couscous Pilaf recipe and (profuse apologies to my Italian friends), it’s just so much more exotic than meatballs and spaghetti lighter too. Couscous is fluffy and not as filling as spaghetti and it doesn’t allow the tomato sauce to fall to the bottom of the bowl the way that spaghetti does (a pet peeve of mine). So on both counts, I prefer the Moroccan version to the Italian one. I urge you to check it out for yourself. This recipe is adapted from Bonnie Stern’s Simply HeartSmart Cooking. I really hope that you enjoy it!

Moroccan Meatballs with Chickpeas in Spicy Tomato Sauce

1 pound extra lean ground beef

¾ cup cooked chickpeas, rinsed, drained and finely chopped

¼ cup finely chopped white or yellow onion

1 clove garlic, finely chopped

1/3 cup dried bread crumbs

1 teaspoon ground coriander

1 medium onion, finely chopped

2 cloves garlic, finely chopped

¼ teaspoon red pepper flakes

1 28 ounce tin, plum tomatoes, pureed with juices

Place all ingredients for meatballs in a medium mixing bowl and combine. Shape into small balls.

Place meatballs on a parchment lined baking sheet and bake for 20 minutes until browned and cooked almost through.

Remove from oven and set aside.

Heat olive oil in a large skillet. Add onion and sauté until soft.

Add garlic and spices and sauté until fragrant.

Add pureed tomatoes. Bring to a boil. Reduce heat and simmer gently for 30 minutes. If the mixture becomes too thick, add a bit of water to thin it out.

Season with pepper and salt to taste.

Add the meatballs and simmer gently until the meatballs are cooked through.

As with any sauce-based recipes, the flavour improves if allowed to sit overnight in the fridge.


1 (16-ounce) box spaghetti, preferably whole grain

5 tablespoons extra-virgin olive oil, divided

1 garlic clove, gently pressed

1 (28-ounce) can peeled, crushed tomatoes

½ cup grated Parmigiano-Reggiano cheese

Sea salt and pepper, to taste

1. Bring a large pot of water to a boil. Cook pasta according to directions, drain, and set aside.

2. Meanwhile, in a medium skillet, heat 2.5 tablespoons of the olive oil. Sauté the garlic until it turns golden, about 3 minutes.

2. Add tomatoes and 1 cup of water to the skillet with garlic and bring to boil. Simmer for five minutes, season with salt and pepper, and discard the garlic.

3. Toss the pasta with the tomato sauce in the skillet. Stir in the remaining olive oil, the fresh basil, and Parmigiano before serving. Season with salt and pepper to taste.

Anyone running the marathon this weekend? I have a hunch that the overlap between people who, say, read a home cooking blog that unapologetically embraces butter and people who, say, run 26.2 miles in their spare time as an personal challenge, is slim-to-none. And yet, I know a handful of people running this weekend that love good cooking as I do, despite the fact that we obviously have nothing else in common. Seeing as they run when not chased, I bet they also do dishes for pleasure and go to bed advisably early for a less cranky tomorrow. Weirdos.

But we can meet at a middle ground affectionately called “carbo-loading”. Runners do it before big races. The rest of us do it because it’s winter and we’re evolutionarily programmed to pad ourselves for warmth. Or because we’re hungover. Or because we’ve been eating too much salad and strive for balance (snerk). And when it comes to carbo-loading, I think this spaghetti with chickpeas wins all trophies. It’s the potato pizza of pasta dishes the squash risotto of comfort foods the breadcrumb-topped baked macaroni-and-cheese from the files of So Good It Could Not Possibly Be Bad, Right?

I found this recipe from New York chef and owner of three great Italian restaurants in the city, Michael White, in an article that recommended it for, fittingly, carbo-loading. Despite the fact that I’m someone who finds over-sauced pasta dishes unforgivable, I still wanted almost twice what this recipe called for. I suggest that below. But we enjoyed it, just the same. I tucked in a bowl that felt like I’d eaten an entire pizza and then as much sleep as the tiny Master of the House allowed and woke up with a surplus of energy. Gosh, it’s like those marathoners are onto something!

As I mentioned above, despite generally wishing for pasta dishes with less, not more sauce, I wouldn’t mind this dish with 1 1/2 to 2 times the sauce. My sauce reduced significantly in the 20 minutes it simmered, uncovered. But, in case that’s just me, I’m sharing the recipe as written and if you are looking at the photos and thinking it needs a little more chickpea sauce love, go ahead and double it. Alternately, you could halve or two-thirds the pasta quantity but what fun would that be?

15 ounces canned chickpeas, rinsed and drained or about 2 cups, freshly cooked chickpeas
1/2 cup chicken stock
5 tablespoons extra-virgin olive oil
1/2 cup pancetta, diced (a little shy of 2 ounces)
1 medium onion, thinly sliced
4 cloves garlic, thinly sliced
Pinch chile flakes
1 14-ounce can tomatoes, chopped
10 to 15 basil leaves
Salt to taste
1 pound spaghetti
Freshly grated Parmesan cheese to taste

Set 1/3 cup of chickpeas aside. In a blender or food processor, combine remaining chickpeas with chicken stock and pulse a few times until chickpeas are chopped.

Place a large pot over medium heat and add olive oil and diced pancetta. Sauté for 3 to 4 minutes until lightly browned a splatter screen will make your stove look better than mine did after this. Add onions, garlic, and chile flakes. Continue cooking until onions and garlic are translucent, about 5 to 8 minutes.

Add chickpea mixture, tomatoes, and basil, and let simmer for 20 minutes. Season to taste with salt. While sauce is cooking, bring a large pot of salted water to a boil. Add spaghetti, and cook until al dente, or tastes like it could use an additional minute’s cooking time. Reserve one cup of pasta water and drain the rest. Toss pasta with chickpea sauce, reserved chickpeas and half of the reserved pasta water until evenly coated and heated through, about one minute. If sauce still feels too thick add reserved pasta water as needed. Season again, as needed, and serve with grated Parmesan to pass.

Deciding to revisit an old favorite, I once again made this rich, earthy and spicy Indian curry made up of four types of legumes and lots of warming spices. If you don't have black chickpeas — also known as kala chana — on hand, you can substitute an additional 1/4 cup of yellow chickpeas, but I will note the black chickpeas add a deeper flavor and nice texture to the dish as they are a bit chewier than their yellow cousins. They do take longer to cook than ordinary chickpeas, so a longer soaking time is pretty much essential. This nourishing dish is especially good with brown basmati rice.

Thick, rich, earthy and spicy chickpea, kidney bean and lentil curry

  • 1/4 cup dried black chickpeas
  • 1/4 cup dried yellow chickpeas
  • 1/4 cup dried red kidney beans
  • 1/4 cup French lentils or split urad dal
  • 2 tablespoons butter, ghee or oil
  • 1 teaspoon brown mustard seeds
  • 1 teaspoon cumin seeds
  • 1 teaspoon ground cumin
  • 2 teaspoons brown or coconut sugar
  • 1 1/2 teaspoons sea salt
  • 1 teaspoon ground coriander
  • 1 teaspoon ground turmeric
  • 1/2 teaspoon asafetida
  • pinch of cayenne
  • 2 to 4 dried red chilies, to taste
  • 1 large tomato, finely chopped
  • 2 to 4 fresh red or green chilies, seeded and finely chopped
  • 2 tablespoons fresh parsley or cilantro, finely chopped, for garnishing

Rinse the chickpeas, kidney beans and lentils and soak for 10 to 12 hours or overnight in enough water to cover. Drain and rinse, then transfer to a large saucepan and cover with fresh water. Bring to a boil. Reduce the heat to low, cover, and simmer until the chickpeas are tender — about 1 1/2 hours.

When the beans are tender, heat the ghee or butter in a frying pan over medium heat. When hot, toss in the mustard seeds and cook for 30 to 60 seconds or until they begin to pop. Add the cumin seeds, ground cumin, sugar, salt, coriander, turmeric, asafetida, cayenne and dried chilies. Stir quickly and then add the tomatoes and fresh chilies. Stir a few times and cook until the tomatoes are softened — about 5 minutes.

Drain off some of the water from the cooked beans to get a fairly thick consistency and add the tomato mixture to the pan. Simmer, uncovered and stirring occasionally, for another 10 to 15 minutes or until the sauce thickens.

Shakshuka is my ultimate comfort food. Whether you order it at a restaurant or make it at home, there is nothing better than eating it straight out of a bubbling pan of spicy sauciness. There is also something almost sacred about eating food that’s had no pit-stops or interruptions: from flame to table.

Shakshuka originates from Tunisia and it’s now a staple on Israeli breakfast tables and restaurants, creeping up on menus all over the world. Traditionally, we dip and mop it up with pita bread or sourdough (or in my kitchen, leftover challah bread). It’s the ideal dish if you’re looking for a leisurely breakfast, or any meal for that matter, because with a generous serving of it (and that’s the way it should be) you can continue to spoon and wipe up the sauces long after the coffee has run out.

When I do any kind of tomato sauce-based cooking, I can rarely resist boiling up some pasta to swirl around in it, so in this case, pasta was my vehicle of choice to soak up the tomato-yolk concoction, as well as chickpeas for that extra bite (and fine, protein too). Spaghetti is easily maneuvered to make the perfect little ditches for the eggs to comfortably cook in, and if you haven’t yet tried the combination of salty runny egg yolks with pasta, it’s about time you do! However, don’t let the spaghetti scare you off, there will always be something left to clean up with a good piece of bread.
