  • 1 teaspoon chopped fresh parsley
  • 4 tablespoons grated mozzarella cheese

  1. Preheat oven to 180 C / Gas 4.
  2. Arrange tomato slices in a single layer on a baking tray. In a small bowl, mix together mayonnaise, Parmesan, Dijon mustard and brown mustard. Season with oregano and salt and pepper to taste. Use a spoon to top each tomato slice with a small amount of the mayonnaise mixture. Sprinkle with mozzarella and then top with parsley.
  3. Bake in preheated oven for approximately 15 minutes or until golden brown. Serve immediately.

I have made these tomatoes for years. Make sure you slice the tomatoes thick and try just broiling them for a few minutes till brown and bubbly rather than baking them. The tomatoes stay firmer and not so mushy as the baked ones. I also always add oregano and omit the mustards. Sometimes I even add a little garlic.-08 Jan 2007

You know, this isn't a complex dish and the preparation is simple and basic. But that doesn't mean it isn't worthy of five stars and in my opinion, this is. What a dressy alternative to just sliced tomatoes! I prepared this with the two mustards just as written and it proved to be a winning combination. The tang of the mustard and Parmesan was the perfect complement for the mellow mozzarella. I used fresh rather than dried oregano as I'm lucky enough to have it in my garden. A quick finish under the broiler browned these up nicely. This is easy, uses quality ingredients, is pretty on the plate and, most important, is full of delicious flavor too.-21 Jul 2011

This was really yummy!! The kitchen smelled so good while it was cooking!! The changes I made were as follows: omitted brown mustard, used fresh basil instead of parsely,sprinkled the s&p directly on the tomatoes & I used garlic mayo.I also broiled them for a minute to brown the top.Will deffinately make again!!-08 Sep 2005

I can’t believe Christmas is just two weeks away! This December has been full of traveling for me, so I feel like I haven’t been home much. In fact, as you’re reading this Monday morning, I’ll be in the sky traveling to Chicago for an overnight trip.

A couple weeks ago, I was in Galveston, Texas for a work conference. My coworkers and I went out to dinner at a fancy seafood restaurant that was AMAZING. I always order seafood when I’m out on work dinners– because Nick hates seafood and it’s my only chance, haha! Anyway, we went to this restaurant that overlooked the ocean and we ordered some delish seafood– appetizers were panko crusted asparagus with creamy crab sauce. I ordered the crab cake stuffed shrimp with macaroni and cheese and parmesan tomatoes.

I didn’t really know what the parmesan tomatoes were when I ordered them, I just assumed they were chopped tomatoes sauteed with some type of cheese. Well to my suprise, these cute little tomato rounds with crusty, melty parmesan were sitting on my plate!

And oh my, they were so good. Like little baby pizzas with all the good tomatoes and cheese and none of the crust. The cheese was so thick, you had to cut them with a knife! I knew that I had to remake these when I got home.

These are so simple, I really don’t need to give you a recipe. All you need are some big, juicy tomatoes, parmesan cheese, and dried herbs. You can add any type of cheese to the tomato slices, but parmesan will taste the best and will give you that nice brown color.


  1. We want to start with setting a cooling rack over a jelly roll pan covered with aluminum foil.
  2. The tomatoes need to be thinly sliced and set on the prepared cooling rack.
  3. We will brush the tomatoes with olive oil and season them.
  4. Tomatoes go into a 275F-degree oven for around 2.5 to 3 hours. Please check every now and then to make sure the tomatoes are not burnt.
  5. Few minutes before taking them out of the oven, you will want to sprinkle the tomatoes with the cheese and bake for an additional 3 to 4 minutes, or until cheese is melty.
  6. Remove from oven and let completely cool for an hour.

Gorgeous and healthy, these parmesan tomato chips belong alongside your favorite sandwich, salad, or a snack. You can use as many as 15 tomatoes, or as little as 5. Adjust amounts of seasonings and olive oil, accordingly.
